COOKING: ROTISSERIE CHICKEN

Ingredients

STUFFING
3 x cups bread crumbs
1 x Onion, finely chopped
Salt & Pepper

GARLIC BUTTER
150g Butter
5 x Cloves of finely diced garlic
1 x Handful of finely chopped parsley
Salt & Pepper
2 x Small chickens or 1 x medium chicken
Salt & Pepper

Method

Combine 150g butter, garlic, parsley and salt and pepper together and set a aside
Combine stuffing ingredients together in a bowl and bring together. This can be done ahead of time at home and taken to camp in a clip-lock bag.
Add stuffing to the chicken cavity, taking care to fill it completely.
Using your finger, separate the chicken skin from the breast, and stuff with garlic butter.
Season your chicken generously with salt and pepper and put your chicken on the rotisserie skewer, taking care to fix it firmly so that it doesn’t spin on the skewer
. Cook over a low heat for roughly an hour or until chickens are crispy and golden on the outside and serve!
