1 chicken broken down into maryland cuts
1 teaspoon thyme
1 teaspoon cumin
1 teaspoon szechuan pepper
1 teaspoon allspice
1 teaspoon palm sugar
1 lime juiced
2 cloves garlic crushed
2 shallots diced
1 drizzle of oil

Step 1 into a plastic bag combine, thyme, cumin, szechuan pepper, allspice and palm sugar. Add the garlic, lime juice, oil and shallots with the chicken marylands. Set aside to marinade for around 4 hours minimum.

Step 2 Place the chicken onto the ozpig grill plate and turn a couple of times to brown and cover. Cook around 25 minutes.
